Umami Sliders with Caramelized Onions

Serves 4

Cook onions in oil over low heat until caramelized, about 15-20 minutes.2.
Grind the short ribs in a meat grinder and set aside.3.
Combine marmite, tamari soy sauce, Worcestershire sauce, truffle salt, anchovies, bonito flakes, and Harissa in a mortar and grind together using a pestle to form a paste.4.
Add the seasoning paste to the grounded short rib meat and mix gently until evenly distributed (don't overmix). Fold in the grated Parmesan cheese to the meat.5.
Form 4 oz. patties and cook in a pan, or on a grill, about 3-4 minutes each side so it's medium or preference of doneness.6. In a small pan, add butter and toast buns.
7. Assemble umami sliders with the buns, patties, caramelized onions, tomatoes, and lettuce.
