Portobello Salmon Burgers

Chipotle Mayonnaise
1. Cube salmon and rough chop salmon in food processor.
2. In mixing bowl, mix salmon, green onions, cilantro, Old Bay seasoning, egg white, panko bread crumbs, garlic powder, 2 tbsp olive oil, roasted red peppers, basil, and pepper.
3. Form into ½-inch patties, add 1 tbsp olive oil to the pan over medium heat, cook each side for 4 minutes. Just before time is up add a slice of provolone cheese on top.
4. While salmon is cooking, add 1 tbsp of olive oil to pan and sauté Portobello mushrooms until soft. Season with ¼ tsp salt, and ¼ tsp pepper.
5. To make chipotle mayonnaise, mix mayonnaise with hot sauce of your preference (we used Chipotle Garlic Sauce from All Spice Cafe).
6. Toast English muffins and begin assembly of toppings and chipotle mayonnaise.
