Pineapple Fried Rice

1 Add 2 tablespoons of vegetable oil and heat the diced onion, minced onion, and jalapeno. Cook until onions are translucent approximately 2- 3 minutes.

2 Add the sliced pork and cook approximately 2 - 3 minutes.

3 Push aside pork, onions, jalapenos, and garlic to one side of the pan so that it is no longer in direct heat. Crack the eggs and cook while scrambling the eggs in the pan. Once eggs are cook, mix all the ingredients together.  

4 Break up left over rice with hands to ensure there are no clumps. Add the rice to the pan over medium-high heat. Add soy sauce and mix thoroughly to blend all the ingredients. Once rice has been mixed and heated gently fold in pineapple and garnish with green onions. Season to taste with salt and pepper. 

Makes approximately 4 servings.
