Lemon Broiled Orange Roughy

1. In a small mixing bowl, stir in lemon juice, Dijon mustard, olive oil, minced garlic, thyme, parsley, salt and pepper.

2. Spray sheet pan with cooking spray. Place fish on sheet pan.

3. Brush entire lemon juice mixture over orange roughy.

4. Broil fish on top rack for 5-7 minutes or until fish easily flakes.

5. Sprinkle with additional salt and pepper to taste.

6. Serve with a lemon wedge.
