Grilled Pork Chops with Mango-Cucumber Salsa

Ingredients
Pork Marinade
½ cup orange juice
2 tbsp soy sauce
1 tbsp honey
2 tbsp olive oil
Mango-Cucumber Salsa
- 1 cup mangoes, chopped
- 1 cup cucumbers, seeded and chopped
- 1 cup tomatoes, chopped

1 cup green bell pepper, chopped

½ cup red onion, diced
- 1 jalapeño, diced
- 1/4 cup cilantro, rough chopped
- 1 lime, juiced
- 1 tbsp rice wine vinegar
- 1 tbsp orange juice
- 1 tbsp olive oil
- Salt & pepper to taste
Directions
1. Marinate the pork chops with orange juice, soy sauce, honey, and olive
oil. Place in the fridge for about 2-3 hours.

In a bowl, combine
all the ingredients for the Mango-Cucumber Salsa and
mix together and refrigerate for 2-3 hours.

Grill the pork chops until cooked through.

Place a few spoonfuls of Mango-Cucumber Salsa on top of grilled pork chops and
enjoy!
