Crab Jambalaya with Catfish

1. In a medium pot heat the olive oil. Add the sausage and cook over high heat until slightly browned about 3 minutes.  Add onions, celery, bell pepper, and cook till vegetables began to soften. Add garlic, 1 teaspoon of Old Bay seasoning, and cayenne pepper.

2. Add rice to the pot with the other ingredients and cook for another 2-3 minutes.

3. Add the tomatoes, chicken stock, and sprig of thyme to the rice. Bring to a boil and reduce heat to simmer. Cover the pot and cook for 10 minutes.

4. Season catfish with remaining ½ teaspoon of old bay and add to pot. Add crab to the pot mixing well to fluff the rice. Cook another 5 minutes covered adding the remain ¼ cup chicken stock if Jambalaya becomes dry. Season with salt and pepper to taste.
