1. In a large pot, add some oil and brown the onions and garlic.

2. Place the chicken thighs into the pot and let it brown up. Cover the pot and let let the chicken cook for about 5 minutes.

3. Add the soy sauce, vinegar, oregano, bay leaves, parsley, garlic powder, and pepper to the pot. Remember to flip the chicken to let it cook evenly. Cover and let it simmer for about 20 minutes.

4. When the chicken is almost done cooking, add the sugar and let some of the liquid evaporate. Then, turn off the heat and let it rest for a few minutes before serving.
