Calamari Salad with Red Potatoes (Insalata di Calamari)

1. Boil diced red potatoes until fork tender. Drain and set aside.

2. Boil squid in salted water for 2-3 minutes, then cool immediately with ice bath.

3. Mince garlic and cook with 1 t olive oil until aromatics are released.

4. In a bowl, combine squid, red potatoes, garlic, olive oil, fresh lemon juice, parsley, salt and pepper. Mix well.

5. Let mixture marinate overnight in the refrigerator tossing every few hours to fully incorporate flavors.
