Atlantic Cod with Miso
(recipe inspired from Chef Nobu Matsuhisa)

Ingredients

Directions

1. Mix together the sake, mirin, miso paste, and sugar thoroughly. Set some aside for plating, and the rest will be the marinade for the fish.

2. Pat the fish filets dry with paper towels and put them into a plastic container or ziploc bag with the mixture. Let it marinate in the refrigerator overnight or for up to 3 days.

3. Preheat oven to 400F.

4. In a hot pan, place the fish down and sear on both sides until you see the sugars caramelize.

5. Transfer the cod on to a baking sheet and bake for 7-10 minutes.

6. Drizzle with some extra marinade on the plate or on top of the fish for extra flavor.

Honey-Ginger Carrots

2 tbsp unsalted butter
1 tbsp honey
1 tbsp minced ginger
2-3 cups of julienne carrots

1. Blanch the julienne carrots in boiling water for about 5-7 minutes until soft

2. Melt butter together with honey and ginger, then add the carrots and mix together.
